Here’s a short video of Hatch New Mexico green chile being roasted at Central Market in Dallas in 2007. Locations all around Texas import New Mexico chile during late summer-early fall harvest time and celebrate the tasty peppers with roastings on the weekends. The in-house bakeries and delis kick out breads, rolls and other foods featuring Hatch NM chile.
The purpose of roasting the chile is to char the tough skins enough make separating them from the pod an easy task.
